Corn & Shrimp Soup...
2 pounds shrimp, peeled and deveined -16 ounce can tomato sauce- 8 small fresh tomatoes-1 pound andouille sausage -1 pound salt pork- 2 (16) -ounce cans whole kernel corn- 1/4 cup minced garlic- 3/4 cup green onions, chopped -1/2 cup celery, chopped- 1/2 cup bell pepper, chopped- 1 medium onion, chopped fine- 10 cups water- 1/2 teaspoon thyme -2 teaspoon thyme- 2 teaspoon rosemary - season to taste - 1 tablespoon parsley flakes -Cooking spray--Cook for 1 hour -15 minutes- Cut salt pork into small cubes and boil twice for 20 minutes-- to remove salt. Apply cooking spray to pan and saute' celery, bell pepper and onion until tender. Place in small stock pot. Add tomato sauce, tomatoes and water. Bring to boil and lower heat. Add corn, sausage and other seasonings. Cover and cook 10 minutes before adding salt pork and shrimp. Cook 10 more minutes . Serve-----
