Chicken A La King
1/2 green pepper, shredded -1 cup mushrooms, thinly sliced - 2 tablespoons flour -Salt and Pepper to taste- 2 cups light cream - 3 cups cooked chicken, cut up- 1/2 cup plus 2 tablespoons butter or margarine, creamed- 3 egg yolks - 1 teaspoon onion juice- 1/2 teaspoon paprika- Cooking sherry- Pimento, shredded - Simmer the 2 tablespoons butter, green pepper and mushrooms 5 minutes. Add flour and seasoning . Stir and cook gently until frothy. Mix in cream, stir until sauce is thickened. Pour into top of double boiler. Add chicken, heat throughly over hot water. Beat creamed butter into egg yolks. Add onion juice and paprika. Add slowly to hot chicken mixture, stirring until thickened. Add sherry to taste. Add pimento. Serve in noodles or hot buttered toast.
