3 slices fresh
ham steak- 1/2 -inch thick Ham stuffing .....2 cups ground cooked smoked
ham 1/8 teaspoon pepper....1/2 cup dry bread or cracker crumbs ....1 egg
-slightly beaten ....1/4 cup onions ...finely chopped....2 teaspoon salt.....
1 teaspoon poultry seasoning .....1/4 teaspoon pepper......1 cup dry bread
crumbs.....1/4 cup hot water........
Mix ham stuffing
ingredients throughly. For bread stuffing, cook onions in butter until
golded brown. Add remaining ingredients for bread stuffing mix. Pound bone
steak to flat. Brown lightly in 2 tablespoons butter. Spread steaks with
ham stuffing. Cover evenly with layer of bread stuffing. Roll as a jellyroll
and tie securely with string. Cover pan bake 30 minutes. Spread rolls with
glaze of half cup orange marmalade mixed with 2 teaspoons maraschino cheery
juice. Bake uncovered 15 to 20 minutes longer. Remove strings. Slice each
roll into 2 -inch slices. Serve...
