CAJUN - BOULLETS
From Chef Michael's Kitchen VOL 1
Prepare sauce ....cover bottom of pot with melted butter....
cut 1 onion...1 bell pepper.....sau.te.in butter..[soft}
..add tomatoe paste ......will lightly stick to bottom...add water and rotels....cook 2 hrs.....

{next} Prepare Garfish...2 pounds ...

 
1 pound Shrimp
1 pound potatoes...boil potatoes and do not mash.....leave chunky....
1 onion....
1 bell pepper...
chopped green onion...
season with salt and little red pepper...
mix together with 2 eggs...<---not sunny side up........ lol



[next]....To Fry...roll in flour and drop in hot grease....fry till lightly brown....take out....
put in sauce and cook for 1 1/2 hrs......
total time for sauce and fish and shrimp...31/2 hrs.....slowly.....keep water low in pot.....for fried only...do not add all to sauce .....or prepare more on the side and fry....For fried crisp.......smash like hamburger...For less crispy....do not smash....round and full....drop into grease and fry....deep brown......
serve with rice and sauce.....
