Crab Meat Au Gratin
Take 2 Pounds fresh white Crab meat.
1 Large Onion and 2 Sticks of Butter.
3 ribs of chopped Celery.
4 tbs. of Flour and 2 Eggs and 10 oz. Grated Yellow Cheese.
Salt and Pepper to taste.
Then:
Sauté the Onions and Celery in the butter, over medium heat till they are soft. Add the flour and blend gradually. Then remove it from the heat. Add Egg Yolks and the Crab Meat, some salt and pepper to taste, and 3/4 of the Cheese you have.
 
 



Then:
Mix well and place the mixture in a casserole and top with the remaining Cheese Bake at 350 for 30 minutes until it is lightly brown on the top. And EAT IT UP !...........
